Busy Week? One Easy, Simple Dinner Shortcut

I think October must be the new December. I cannot get over how busy this month has been. Between Matthew traveling out of the country for 10 days, my course launching, my regular job responsibilities, soccer practices and games, school fundraisers and more, we have been go, go, go.
All of the busyness has meant that we have not had as much time to cook as we normally do. I detest fast food though, so have looked for other ways to make things easier.
I’m thankful to have discovered Michael Angelo’s Signature Meals, as they have been a great way to fill my lack-of-time-for-cooking gap. I’ll be honest though, I didn’t expect that I would love the food as much as I did! I grew up on Italian food (my grandfather was 100% Italian), so I am a bit of an Italian food snob. Michael Angelo and his mom, Sara use only real ingredients in their foods and they don’t include any preservatives and nothing artificial. This is REALLY important to me, and I think makes a big difference in the quality of the food.
I bought the Michael Angelo’s Lasagna with Meat Sauce and our family thought it was fantastic. Their lasagna is made with fresh beef, vine-ripened tomatoes and fresh herbs that are sautéed and layered with firm 100% semolina lasagna and topped with imported Pecorino Romano cheese from Italy. YUM YUM YUM
It was every bit as good as a home-cooked meal, and really helped to make a meal easier during this busy season for our family. All my kids ate it, which is a huge mom win, and Ezra had two servings – ha!
