Holiday Brunch Menu

I hosted a holiday brunch for 22 of my high school junior’s friends. After the party, he told me that everyone kept raving about the food. It was a delicious menu that was easy to prep some of it ahead, making day of not very stressful.

Brunch Menu
Waffles: 7 batches of Kodiak waffles — add in vanilla, cinnamon and sugar + homemade whipped cream. I made these right before serving and kept them hot in a slow cooker. (If it had been a smaller group, I would have made these Joanna Gaines pancakes, which are my FAVORITE, but they are a bit more time consuming. Also, several boys requested waffles — ha!)
Egg, sausage and cheese breakfast casserole — I prepped this the night before. It took about 55 minutes to bake, so keep that in mind. Huge hit!
Diced potatoes — I used two 1 lb. bags of frozen diced potatoes and then additionally diced six more russets using this gadget. (I realized I should have bought 4-5 bags, which is why I did the mix of frozen and fresh). I made the potatoes the morning of the brunch in the oven (coated in olive oil + potato seasoning) and then transferred to a crock pot to keep warm. Every bit was eaten.
Viral chocolate chip croissant casserole — This was very rich and felt special for the holidays. When you make this, cream the cream cheese first, then add eggs, then sugar, then milk. The recipe is not written very detailed, but follow that order.
Bacon — lots of bacon! I did 48 slices and could have had more. Boys eat a lot of bacon!
For drinks I served punch, orange juice and water.

The kids had so much fun and were so grateful. What I’ve learned from hosting over the years is that a lot of people don’t want to do it, or get really stressed about the size of their house, having things perfect, etc. None of those things really matter. Some warm food and hospitality is all you need to make people feel happy and delighted. I know this was a gathering these kids will remember, and I loved hosting it. 🙂
