40 New Recipes: Months 2-4
Each month I am going to share the recipes I made in the previous month as I endeavor to make 40 new recipes in 2020. For some reason, I stopped tracking my new recipes when Safer at Home went into effect, but I think I remembered most of them below. I hope they help inspire you to try some new recipes.
Recipe #9: Beef and Cannellini Bean Minestrone: Well, I subbed kidney beans for cannellini beans, but whatever! 🙂 This was a yummy, easy soup that came together quickly. My kids don’t eat beans, but Matthew and I liked it.

Recipe #10: Chocolate Mascarpone Pound Cake: This was a super cake to make. Though my kids loved it, Matthew and I thought it was a bit dry. I probably won’t make it again. It did call for a few ingredients that I don’t regularly have in the house (boxed pound cake, mascarpone), but were easy enough to get!

Recipe #11: Instant pot mac and cheese: I have made another version of this recipe before that calls for chicken stock. This one called for water and a few different spices, so I thought I would try it. It was terrible. It said cook for 6 minutes and I think it should have been 3-4. The pasta was mush.
Recipe #12: Crunchy Baked Pork Chops: This was good, but it was a bit putzy (you make your own bread crumbs before breading the pork.) That said, it was a crunchy, yummy coating that the whole family liked and ate. Way better than store bought breading.

Recipe #13: Turkey Meatloaf Muffins – This is a super simple meatloaf recipe that you cook in muffin tins instead of a big loaf. It’s perfect for a weeknight because the meatloaf cooks so much faster. Plus you can freeze them in individual servings.
Recipe #14: Yellow potatoes in the instant pot: This is hardly a recipe, but since I never cooked potatoes this way, I am counting it.
Recipe #15: Cheesy Knife & Fork Meatball Subs: This recipe from Chrissy Teigen’s cookbook was partly awesome, partly only okay. It includes a homemade tomato sauce that was WONDERFUL and we will definitely make again. But, we found the meatballs to be a bit too heavy on the breadcrumbs.

Recipe #16: Twitter’s Banana Bread: This recipe from Chrissy Teigen’s cookbook and it was excellent. It tastes more like cake than banana bread, thanks to the vanilla pudding in the recipe.

Recipe #17: Cheesecake: I had never made cheesecake from scratch and was so proud of my first attempt. This Sugar Spun Run recipe was perfect for a beginner because it didn’t require a water bath.
Recipe #18: White Chocolate Chip Brownies: I discovered an abundance of open chocolate chips in my kitchen baking cabinet, and this brownie recipe was the perfect way to use some of them. You melted the semisweet chips in the batter, then sprinkled in the white chocolate chips. YUM!

Recipe #19: Spinach and potato gratin: This was an incredibly rich side that Matthew and I loved, but was too much for the kids.
Recipe #20: Steak Strip Provolone Pretzel Roll Sandwich: This was one of my favorite meals we have gotten from home chef. Holy cow was it delicious.
Recipe #21: Parsley Butter carrots: These were simple and delicious. The kids wanted more!
Recipe #22: Crispy orange chicken with jasmine rice and broccoli: This was so fun to make and delicious.
