My Love of Pasta + a Free Cookbook
I’m only 25% Italian, but I like to claim it like I’m 100%. I grew up enjoying homemade spaghetti sauce regularly and eating Italian salad almost every night.
Now that I am an adult, I appreciate these amazing meals my mom made even more. Pasta night is still a favorite in our house because it is so good – and so easy. Every mama needs some easy meals to go to.
We rarely eat out as we find that we enjoy what we cook at home more, plus it saves us money. I am constantly looking for quick, nutritious and delicious recipes for our family (as you can see from my Pinterest boards). Italian is always a favorite.
Needless to say, I was really excited when I had the opportunity to learn more about Barilla’s efforts to help families make meal time easier with some new recipes for modern families. (More than 85% of parents find pasta to be an easy and nutritious meal.)

We made the Ditalani Soup with White Beans and seriously LOVED it. So, so good – and easy. (We added some Sherry to give the soup a bit more flavor. I love Sherry in soups.) This definitely is going in our regular meal rotation.I love that it has pasta in it and is a vegetarian option, which is something we don’t do often at meal time.
My favorite part of the soup was the fresh Parmesan on the top – it just melted into the soup- yum!
Here’s the recipe:
Pasta Soup With White Beans
1 1/2 c. Ditalini
3 T. olive oil
1 c. diced onion
1 c. carrots, diced
1/2 c. celery, diced
2 gloves minced garlic
48 oz. chicken broth (I used 60 oz)
2 cans cannellini beans, drained and rinsed
2 cans diced tomatoes
1/4 c. Italian parsley
1 t. oregano
salt and pepper to taste
1 c. shaved Parmigianino-Reggiano cheeseHeat oil in a large stockpot over medium-high heat. Add onion, carrot, celery and garlic. Sauté 3-4 minutes, or until tender, stirring occasionally. Add broth and beans. Heat to simmer. Stir in tomatoes, pasta, parsley, oregano, pepper and sale. Boil 10 minutes, stirring occasionally. Stir in 1/2 cup of cheese. Serve topped with remaining cheese.

Pasta is definitely in our rotation in many different recipes, and we only use Barilla, because it tastes so much better! So you can bet I downloaded that cookbook immediately — thank you!:)
We rarely eat out because it is so expensive. Pasta is a must in this house. Tonight it’s Spinach Tortellini Soup, a pinterest favorite!
I’m not Italian (obviously :)). But, we eat pasta at least 1 – 2 times a week. Being a working mom, it’s always a super-easy meal to make. Thanks for letting me know about the free cookbook. Such yummy recipes!
We tend to eat in more than out. And pasta — what can I say — my son LOVES all kinds of it. My Livvie though just likes spaghetti noodles w butter!
We eat at home a lot… and when we do go out I usually end up thinking “we could have made that at home and it would have been a lot cheaper!” In the winter we have soup once a week and it’s hard to find soups that aren’t cream based and are filling. This one looks like it meets both our requirements. We will have to try it.

We try to eat home most of the time. My husband’s family is Italian and we have some wonderful recipes handed down from his grandmother.
That soup looks delicious – I’ll have to try it. I love making soup when the weather is cold.
We generally eat out a couple times a week. It’s always a treat on the weekend and a quick fix on weeknights when we’re busy with activities. But, I really love ( and prefer ) quiet nights eating at home. We have pasta about once a week- so many options!
We eat at home all the time – my husband wouldn’t have it any other way 🙂 (I’m going to pretend it is because I’m SUCH an amazing cook 🙂 We do have pasta all the time – and heading in to the cooler months love having more options – this looks divine!

We probably serve pasta 1x a week. We are trying to eat more Paleo–meats and greens and when we do add pasta it is whole wheat and loaded with vegetables. I do like the trend of bring back the family meal. We eat together 6x a week. Your soup looks gorgeous.
