There’s just something about red velvet desserts that brings out lots of opinions. Some consider it to be their favorite dessert, while others wonder what the fuss is about.

Red velvet cake is traditionally a red layer cake with either cream cheese frosting or Ermine frosting.  (Ermine frosting is a different method of making buttercream frosting and is also referred to as a “boiled milk” frosting.) The cake was created at the Waldorf-Astoria hotel in New York but it’s usually viewed as a Southern recipe.
